The wine -making is entirely made by gravity in the new cellar built in 2007 and 2008. All our cuvees are processed by vine variety and by vine area. Two pneumatic presses – one with opened cage and one without – insure receive the grapes under cool perfectly controlled temperature.
Cold pre-fermentation boosts both the aromas and the texture of the wines. This new wine cellar gives us the opportunity to keep on developing the necessary excellence of a “Cru Classé”.
