The old wine storehouse
We breed our wines in the underground cellar built by the Lérins monks between the XII and the XVII century.
We still use those carved in the rock by the monks during the XII century. They were tiled with earthenware , to-day vitrified to insure perfect hygiene. Only their closing have been modernized and adjusted to our present-day work method.
Thus, these cellars protect our wines in the best conditions of hydrogometry and temperature : constant all year long.
The wine -making is entirely made by gravity in the new cellar built in 2007 and 2008. All our cuvees are processed by vine variety and by vine area. Two pneumatic presses - one with opened cage and one without - insure receive the grapes under cool perfectly controlled temperature.
Cold pre-fermentation boosts both the aromas and the texture of the wines. This new wine cellar gives us the opportunity to keep on developing the necessary excellence of a “Cru Classé”.
In the old wine storehouse, barrels and half-hogsheads allow us to raise in wood certain vintages according to a skilfully studied dosage, different according to esch of them.
2 different rooms represent the tasting cellar. One "la Calade", ideal for receptions offers also a nice spot for meals and parties and is a beautiful XVIIIeen century place with ceiling and soil very typical of that period it was the former silk family manufacture. The other one, more confidential, decorated with different styles, is a warm place to intimately taste our range of wines and discover our gastronomical and table ware items.
